Brown Sugar Cookies

   Sugar cookies are all the rage. I mean, who isn't looking for the perfect sugar cookie recipe? Well I myself have tried a few different recipes "back in my day" and none measure up to those amazing ones you can buy at the local grocery store. So I've given up...almost.





   Brown sugar cookies are completely different and also very very tasty. They are very soft and almost melt away in your mouth. They don't even need frosting, they are flavor-filled all on their own! Surfing through the Pinterest cookies page, as I generally do, I found this recipe and knew that that would be the one to try for this week!




   As you can see, this recipe does create a lot of cookies, and this picture does not even include the ones my dad ate! This recipe makes almost 4 dozen cookies depending on the size, but they will probably be gone before having to worry about leftovers. They can be stored in an air-tight container for up to a week though, just in-case you need them last minute for someone's bake sale.

   As you can see in the above picture, one of the cookies is darker than the rest. This may happen with the first 1-2 batches as you figure out the cook time needed for the cookies, but the darker cookie is, in fact, over-cooked. Below is a closer picture of the cookies:




   The difference in perfection and over-cooking can be as little as one minute. Look at the cookies after 6 minutes and every minute after until you get the right side looking cookie. It is alright if the middles look a little under-cooked, they will settle after being out of the oven and keep the cookie soft instead of crunchy.

   This is actually the second batch I have made (since I did not take pictures the first time) and people at school absolutely loved them! If you are looking for a quick and easy cookie that is simple but tasty, then this is the cookie recipe to try.





Recipe-


Ingredients:

2 cups Flour
1 tsp Baking Soda
1 1/2 tsp Cornstarch
1/2 tsp Ground Cinnamon
1/4 tsp Salt
3/4 cup butter, melted
1 1/4 cups Brown Sugar
1 large Egg, room temperature
2 tsp Vanilla
1/3 cup Sugar, for rolling

Directions:

1. Toss together the flour, baking soda,cornstarch, cinnamon, and salt in a large bowl. Set           aside.
2. In a medium sized bowl, whisk melted butter with the brown sugar until no lumps remain. Whisk in the egg.y in the vanilla.
3. Pour wet ingredients into the dry mixture and mix together with a large spoon until combined. The dough will be soft, yet thick. 
4. Cover dough and chill for 2 hours. Chilling is mandatory. If chilling for more than 2 hours, let the dough slightly soften for 10 minutes before use.
5. Preheat oven to 325 degrees F and grease/line two large baking sheets. Set aside.
6. Pour the sugar into a shallow bowl. take 2 Tablespoons of dough and roll into a ball, then roll in the sugar. Bake for 8-9 minutes. Cookies will appear very soft in the middle, but that is okay. 
7. Remove from oven and allow to cool on a cooling rack. Store in an airtight container at room temperature for up to a week. Enjoy!
